Auricchio — an aged Italian provolone with a firm, dense texture and a sharp, tangy, slightly spicy flavour that sets it apart from mild table provolone. Made using a traditional stretched-curd method and aged for depth and character. Slice thin for a charcuterie board or grate over pasta and pizza.
